Method
- Separate egg whites and beat until firm peaks form
- Gradually add in CSR Monk Fruit Classic to the egg white mixture
- Fold in vanilla essence, corn starch and white vinegar
- Transfer to a tray with baking paper and bake for 10 minutes at 180c
- Reduce heat to 150c, then bake for a further 45 minutes
- Once cooled, top with whipped cream and seasonal fruit
