Hide & seek fritters

A perfect way to hide vegetables!

Every little kid loves sweet corn but they still need green veggies in their diet, and hiding them in fritters is a great way to do this.

Ingredients

Method

  1. Grate zucchini; squeeze firmly to remove excess liquid. Place in a small bowl.
  2. Stir flour, milk and eggs in a medium bowl until well combined and mixture is smooth. Season with salt and pepper.
  3. Add zucchini and corn to flour mixture.
  4. Heat oil in a large non-stick frying pan over medium heat. Cook ¼-cup measures of the zucchini mixture, in batches, for 3 minutes each side or until golden and cooked through. Drain on paper towel. Transfer to a plate and cover to keep warm. You will have 12 fritters in total.
  5. Serve fritters with avocado and coriander leaves.
